     range of nutrition topics. Workshops (where attendees are
     shown how to design their own personal nutrition plans)
     can be included in any talk session that is 1.5 hours or
     more in length.

     Seminar Menu:
     1-2 hr talk: Creating the Healthiest Diet
     Description: There are two powerful ways to determine the
     healthiest diet: Epidemiology and clinical research. The
     first shows us that we can score diets numerically to see
     how well they improve our health (i.e. how long they help
     us to live). Clinical research helps us to understand the
     processes in the body that leads to nutrition improving or
     reducing our health. Combining these techniques allows us
     to create the best diet for optimal health, including a meal
     planner and a grocery list.


     2-3 hr talk: Creating YOUR Optimum Diet
     DESCRIPTION:  The above (1-1.5 hr talk) description, plus
     the emphasis of a diet will shift depending on our specific
     goals, our daily schedule, and our food preferences.
     
Ultimately, everyone's diet should be as unique as
     they are. Understanding some of the details associated with
     proteins, carbohydrates and fats allows us a tremendous
     amount of control over our dietary options to take us to our
     weight loss, longevity, energy or performance goals.

     3.5-4 hr talk: Taking It To The Next Level
     CHOOSE ANY 2 OF THE FOLLOWING 3 ITEMS TO BE
     INCLUDED IN THE SESSION:
     A workshop where attendees create their own nutrition      plans,
OR:
     A 30 min workshop where I review products and      supplements brought in by the attendees,
OR:
     The addition of some (3.5 hrs) or all (4 hrs) of the following
     special topics to the seminar:
     - Toxins in protein (mercury in fish, carcinogens in BBQ
       deli meats, etc): How much should we eat?
     - The impact of dietary fats on metabolism and brain health
     - Phytonutrients: What they do and how to optimize their
       impact on our lives
     - Low-calorie sweeteners: The facts, and how to address a
       sweet tooth or sugar addiction
     - ANY SPECIAL HEALTH OR PERFORMANCE TOPICS


     4.5-5 hr talk: The "I want it all" Talk
     
All 3 of the above.

     1-3 hr Special Topic Seminars: Clinical or Sports
     Specific
     Covers key topics of interest, like: weight loss, fad diets,
     "metabolic syndrome"; performance Nutrition for marathon,
     triathlon, strength, over-training; and nutrition for the top
     15 mortalities and cancers in the US.

     3-4 hr Nutrition training for Clinicians or Coaches
     Intensive 4-hour seminar reviewing the scientific literature
     emphasizing either sports or clinical nutrition and its
     application. These advanced sessions assumes a solid
     foundation of basic nutrition knowledge by the attendees.


     5-9 Hour Forums
     Varying degrees of topic coverage. The 9-hr forum (2.5 hrs
     during an evening followed by 6.5 hrs the next day, or all in
     one day with sessions in the morning, afternoon & evening)
     is the equivalent to my UCSF and Stanford Medical School
     courses (clinical) or my advanced sports nutrition course in
     Athletics at Stanford.


     Food Labs:  These include actual meal preparation
     We will make meals and snacks that contain a complete
     spectrum of optimum nutrients. No stove-cooking is
     involved; availability of a microwave may be beneficial.

     Food labs require a 1 hr lecture (or any seminar; see
     above) followed by one of the following:

     Food demonstration: A 15 min demonstration including
     portion sizes for pasta and rice, making a healthy salad,
     sandwich & snacks. Demonstration and food cost is $180.

     Performance demo: Preparation of shakes and training
     fluids; 15 min. Cost is $180

     1 Hour Food Lab: Choose 1/2 of the meals & snacks in
     the list below, $80/person (minimum $800)

     2 Hour Food Lab: Includes all of the meals & snacks in the
     list below, $120/person (min $1200)

     - A mixed-green and spinach salad with mixed vegetables
       and healthy fat options
     - Making breakfast cereal a complete meal with key
       additions
     - Snacks & sandwiches containing nuts/nut butter versus
       vegetables/tofu
     - The addition of low-mercury fish sources to meals
     - Nachos with beans, vegetables and other healthy additions
     - Cottage cheese or yogurt with fruit, nuts and whole grain
     - Making pizza, pasta and burritos dramatically healthier

     Performance Food Labs: 1-2 hrs as above but including
     the preparation of shakes & training fluids (cost is an
     additional $10 / person per hour)
